Chinese Mandarin Orange Chicken Salad
Definitely a favorite of mine, this Chinese mandarin orange chicken salad is a lightly and tasty treat anytime of the week. The key is to add the crushed ramen noodles just before serving. This prevents them from getting soggy.
Ingredients
3 cups chopped iceberg lettuce
2 cups finely shredded red cabbage
2 cups shredded chicken
1 can mandarin oranges (10.5 oz), drained
1 pkg ramen noodles (noodles only crushed)
3 carrots, peeled and shredded
1 bunch green onions, chopped
1/3 cup sliced almonds
For the Dressing:
1 tbsp sesame oil
1 tbsp hoisin sauce
2 tbsp soy sauce
1 tsp minced ginger
2 tsp minced garlic
1/4 cup vegetable oil

To assemble the salad, in a large bowl combine the chopped iceberg lettuce, shredded cabbage, shredded red cabbage, mandarin oranges, crushed ramon noodles, shredded carrots, chopped green onions, sliced almonds. Toss everything together to combine.

To make the dressing, whisk the sesame oil, hoisin sauce, soy sauce, minced ginger, minced garlic and the vegetable oil all together to combine.

Mix the dressing and salad together and toss to combine. If you are serving the salad later, wait to add the crushed ramen noodles just before service so they don’t get soggy.
