Carrot Cake Cupcakes with Cream Cheese Frosting

Carrot Cake Cupcakes

These delicious carrot cupcakes are so easy to make and everyone will love them. Perfect for Easter or anytime of the year when you have a craving for delicious carrot cake!

Ingredients

1 spice cake box
3 eggs
1/2 cup oil
1 cup water
1 cup shredded carrot
3/4 cup golden raisins
1/2 cup pineapple tidbits, drained
1/2 cup chopped walnuts
For the Frosting: 1 pkg cream cheese, 8 oz
1 stick softened butter, 8 tbsp
1/4 cup pineapple juice
4 cups powdered sugar

Instructions

Preheat your oven to 350 degree’s.

Line two cupcake tins (makes about 19-20 cupcakes).

In a large bowl add the spick cake mix, eggs, oil, water, shredded carrots, golden raisins, drained pineapple tidbits and the walnuts. Mix everything together until well combined.

Spoon into prepared cupcake molds and bake in the oven for about 15 minutes or until baked through. Remove from the oven and allow cupcakes to cool completely before frosting.

To make the frosting, make sure the cream cheese and the butter are at room temperature and add them to a bowl along with the pineapple juice and powdered sugar. Mix together together until completely mixed.

Ice the cooled cupcakes with the cream cheese frosting and serve.
