Japanese Mixed Rice with Chicken
This is a delicious Japanese mixed rice dish has so many flavors and textures in it. This is a complete meal in itself, however, you can serve it as a side dish if desired with your favorite dinner.
Ingredients
1 1/2 cups short grain rice
1 boneless skinless chicken breast, cut into bitesize cubes
4 shitake mushrooms, stems removed, thinly sliced
10-12 slices lotus root
1 deep fried tofu pouch (aburaage), thinly sliced
1/3 pkg konnyakua (konjac, yam cake), thinly sliced
1 cup frozen mixed vegetables
1/4 cup thinly shaved gobo (burdock root)
1 3/4 cups chicken stock or Japanese soup (Dashi)
1 1/2 tbsp mirin
1 1/2 tbsp soy sauce
Instructions

Wash the rice 3-4 times or until the water is clear.

Add the washed rice into your rice cooker along with the stock, mirin and soy sauce.

Place the chicken on top of the rice so it fully cooks through and layer the other ingredients on top. Do not mix the ingredients together until fully cooked.

Cook the rice according to your rice cooker. You can make this is a sauce as well.

Once the rice is cooked, gently fold everything together to combine.

Serve with freshly chopped green onions on top, serve and enjoy!
