Chicken Marsala alla Chef Bryan
This delicious chicken marsala is an easy dish to make for dinner. Milanese in style this breaded chicken with an easy marsala sauce over it puts gourmet back in your dinner!
Ingredients
2 chicken breast
1/2 cup flour
2 eggs
2 cups panko bread crumbs
1 cup finely shredded parmesan cheese
4 tbsp butter
3 cups sliced mushrooms
2 tbsp flour
1/2 cup marsala wine
2 cups chicken stock
Season Salt
Black Pepper
Instructions

Slice the two chicken breasts in half lengthwise. Season with salt and pepper.

In a large re-sealable bag, mix the panko bread crumbs and parmesan cheese.

Whisk the eggs in a medium size bowl.

Dredge the chicken in the flour, dip in the eggs and coat in the panko bread crumb mixture.

Heat a large fry pan with enough oil to coat the bottom of the pan.

Fry the chicken pieces until they are golden brown and cooked to 165 degrees internally.

Wipe out the frying pan and add the butter and the mushrooms. Sauté the mushrooms for a couple of minutes or until they release their moisture and begin to brown. Sprinkle with the flour and mix together creating a roux.

Pour in the marsala wine and mix together, add the chicken stock and bring to a simmer. Continue to cook down until a sauce consistency is reached,

Serve the chicken with the marsala sauce over it with your favorite sides and enjoy.
