Lemon Stir-Fry Chicken
This easy to make stir fry is a great option for dinner. You can use chicken breasts instead of thighs if you choose. Serve with your favorites vegetable to complete the dish.
Ingredients
5-6 boneless, skinless chicken thighs
1/3 cup cornstarch
1 chicken bullion cube, crushed
5-6 cups cooked rice
For the Sauce:
1/4 cup brown sugar
1/4 cup brown sugar
1 small onion, minced
Juice and zest from one lemon
3 tbsp soy sauce
1/2 cup chicken stock
1/2 tbsp cornstarch

Cut each chicken thigh into 6-8 pieces and place them in a bowl along with the cornstarch and crushed bouillon cube. Toss to through coat the chicken pieces with the corn starch and seasoning.

Deep fry the chicken pieces until they are fully cooked, remove from the deep fryer and set aside.

In a small bowl whisk the sauce ingredients together until combined.

In a large fry pan pour the sauce and add the cooked chicken pieces , stir until the sauce thickens up.

Serve over rice and with your favorite sides.
