Ingredients
1 pound cooked beef roast, thinly sliced
1 large onion, sliced
Velveeta cheese slices
6 submarine sandwich rolls
Olive oil
Instructions

Heat a large griddle on the stove. Lightly drizzle with olive oil.

Sauté the sliced onions until caramelized. Add the sliced roast beef and saute with the caramelized onions until warmed through.

Divide the caramelized onions and beef into six equal sandwich size portions and top each with 3-4 sliced of Velveeta cheese.

Toast the submarine sandwich rolls and place the bottom piece of the roll on top of the melting cheese. Using a large spatula, turn the sandwich over and top with the corresponding roll top, serve with your favorite sides and enjoy.
