Beef Eggroll Skillet
This delicious Beef Eggroll Skillet recipe is brought to us by the Utah Beef Council. Easy to make and so flavorful, serve it over rice or simply in a bowl by itself for a healthy dinner.
Ingredients
1 tbsp olive oil
1 small sweet onion, diced
3 garlic cloves, minced
1 tbsp fresh ginger, minced
1 pound extra lean ground beef
6 cups coleslaw mix
1 cup shredded carrots
1 tbsp soy sauce
1 tbsp hoisin sauce
1 tbsp sesame seed oil
1/4 cup chopped green onions
Instructions

Heat a large sauté pan on the stove and add the olive oil, diced onion, minced garlic and ginger. Sauté until fragrant.

Add the extra lean ground beef and sauté until fully cooked.

To the beef mixture, add the coleslaw mix and shredded carrots. Sauté for several minutes until the cabbage is soften.

Add the soy sauce, hoisin sauce and sesame seed oil gently stirring to incorporate. Finish by sprinkling with chopped green onions. Serve with your favorite sides.
