TruffleHive Cheese Lasagna Roll Ups

Ingredients
1 pkg uncooked lasagna noodles (1 pound)
2 eggs, lightly beaten
2 cups ricotta cheese
2 cups shredded TruffleHive Cheese
1 can (24 ounce) pasta sauce
Salt and Pepper to taste
Vegetable Spray
Instructions

Preheat your oven to 350 degree’s.

Cook lasagna noodles according to package directions. Once cooked, drain and place in cold water until ready to make the lasagna roll ups.

In a large bowl, combine the eggs, ricotta cheese, 2 cups of the shredded TruffleHive Cheese, salt, pepper and nutmeg. Mix together well.

Spread about 1/3 cup cheese mixture over each noodle and roll each noodle up.

Pour 1 cup pasta sauce into an 9x13 baking dish that has been sprayed with vegetable spray.

Place lasagna roll-ups seam side down over sauce. Top with remaining sauce and sprinkle some additional shredded TruffleHive Cheese on top.

Bake covered for about 20 minutes, remove the cover and continue cooking for about 15 minutes to melt caramelize the shredded cheese on top.

Remove from the oven and let it sit for 10 minutes. Serve with a delicious chopped salad and a roll on the side, enjoy!
