Bacon Mac and Cheese
Bacon mac and cheese is a staple around my house. Easy to make and packed with flavor, this dinner idea is the best. I add a different level of goodness by using my roasted compound butter in the roux.
Ingredients
1 pkg elbow macaroni
5-6 slices bacon
1 tbsp roasted garlic compound butter
1/3 cup flour
2 cups milk
2 cups shredded cheese
Season salt and pepper to taste

Cook the elbow macaroni and cheese according to the package directions, drain and set aside.

To make the cheese sauce, render the fat from the bacon and add the roasted garlic compound butter. Remove the bacon from the pan and set aside. Once the compound butter has melted into the bacon grease, whisk in the flour and fully incorporate it into the fat. Whisk in the milk and simmer for a couple of minutes until it starts to thicken. Stir in the shredded cheese and continue stirring until everything is incorporated and smooth.

Add the cooked and drained elbow macaroni to the cheese sauce and fold everything together to incorporate the cheese sauce with the cooked pasta.

Chop up the bacon into bite size pieces and sprinkle over top of the mac and cheese before serving.
