
Chicken Southwestern Salad with a Spicy Fajita Balsamic Vinaigrette
This quick and easy salad uses all of your favorite flavors. I used a southwestern style seasoning but you could easily use your favorite prepared taco seasoning.

Ingredients
2 flour tortillas, toasted
2 cups shredded cheese, your choice
2 cups rinsed black beans
6 cups chopped romaine lettuce
1 bell pepper, sliced
3 tomatoes, chopped
2 chicken breasts, cooked and sliced
Dressing:
1/3 cup balsamic vinegar
1/3 cup extra virgin olive oil
2 tsp Southwestern Fajita seasoning
2 tsp black pepper
1 tbsp dijon mustard
Salt to taste

Toast the flour tortillas in a fry pan until the are golden on each side. If desired, slice the flour tortillas into 4 pieces to make it easier to portion out.

Place the prepared tortillas on a large plate and sprinkle with the shredded cheese and black beans.

Place the chopped romaine lettuce on top and arrange the sliced bell peppers, chopped tomatoes and sliced/cooked chicken breasts on top of the salad.

To make the dressing: In a mixing cup add the balsamic vinegar, extra virgin olive oil, Southwestern fajita seasoning (can use taco seasoning too), black pepper and dijon mustard.

Using a whisk or immersion blender, mix the dressing until well emulsified.

When ready to serve, pour the dressing over the salad, serve and enjoy. Adjust salt and pepper as needed.
