Chicken Broccoli Stir-Fry
Here’s a delicious chicken and broccoli stir-fry that’s really easy to put together for dinner. The secret for this recipe is velveting the chicken so it soft and tender!
Ingredients
2-3 chicken breasts, thinly sliced against the grain
1 egg white
2 tbsp cornstarch
1/2 tsp baking soda
1 broccoli head, florets removed
1 red bell pepper, thinly sliced
3 carrots, peeled and thinly sliced
1 bunch green onions, chopped
1 medium onion, sliced
2 tbsp oyster sauce
1/4 cup soy sauce
2 tbsp sugar
3 tbsp Mirin or Cooking Sherry
1 tbsp minced garlic
4-6 cups cooked rice
Salt and pepper to taste
Vegetable oil
Instructions

To a large bowl, add the thinly sliced chicken pieces with the egg white, cornstarch and baking soda. Mix everything together to combine, cover and refrigerate for 30 minutes before cooking.

Heat a large saute pan on the stove and add enough vegetable oil to lightly coat the bottom of the pan. Fully cook the chicken and once cooked, remove from the pan, set aside.

If needed, add some additional oil to the pan and saute the broccoli, red bell pepper, sliced carrots, chopped green onions and the sliced onion. Saute the vegetables for about 5 minutes.

While the vegetables are cooking, to a small bowl, mix the oyster sauce, soy sauce, sugar, Mirin and sugar together until combined.

Add the cooked chicken to the vegetables and mix together. Pour the sauce over the mixture carefully stirring everything together to combine. I like to fold the mixture together to make sure everything is coated with sauce.

Serve the prepared stir-fry with cooked rice and enjoy!
