Pasta Alfredo with Spinach and Mushrooms
Easy and delicious, this pasta alfredo incorporates spinach and mushrooms for a rich flavor that everyone is going to love!
Ingredients
1 package fettuccine noodles
1 tbsp minced garlic
1 medium onion, sliced
1 package baby bella mushrooms
4 cups spinach, washed
1 1/2 cups heavy cream
1 cup shredded parmesan cheese
Olive oil
Salt and pepper to taste
Instructions

Cook the noodles as directed on the package, drain and set aside.

In a large frying pan add enough olive oil to lightly coat the bottom of the pan. Add the minced garlic and the sliced onion, saute for a couple of minutes.

Add the baby bella mushrooms to the pan and saute for about 3-4 minutes or until the mushrooms start to release their water.

Add the spinach and cook down the spinach for couple of minutes. Pour in the heavy cream and add the shredded parmesan cheese. Simmer for about 5 minutes or enough time to reduce the cream to about 1 cup. Slowly stir the pan while you are reducing cream.

Add the cooked/drained pasta to the pan and mix the pasta with the other ingredients until well combined. Serve with your favorite garlic bread and enjoy!
