Pumpkin Pizza

Pumpkin Pizza

When fall comes around my taste buds turn to fall foods. One of my many favorite fall foods is pumpkin. I love everything pumpkin and so when I decided to make a pizza using pumpkin, I was a little skeptical until I actually made it.  I’m so excited for you all to try this pizza because it was amazing!

 

Ingredients

For the Pizza Crust:
2 cups sour dough start
6 cups bread flour
2 cups water
1 tbsp salt
For the Pizza:
1 large onion, sliced
1 tbsp minced garlic
1 large can pumpkin puree
6-8 cups arugula
8-10 slices havarti cheese or to taste
garlic or basil infused olive oil
salt and pepper to taste

Instructions

To make the crust, (the night before) combine all the ingredients in a mixer and knead for about 25 minutes or until the dough is smooth.

Spray a large bowl with vegetable spray and transfer the dough to the bowl. Spray the dough with vegetable spray and cover loosely with plastic wrap. Let the dough proof over night. Make sure the bowl is large enough to accommodate the dough, otherwise you will have dough all over your kitchen counter in the morning.

Preheat the oven to 450 degree’s. The next day when your ready to make your pizza’s, heat a large saute pan on the stove and add about 2 tbsp of basil infused olive oil. Saute the onions and garlic until fragrant and add the pumpkin puree. Stir and heat through.

While the pumpkin is warming, roll out the pizza dough to your desired size. I like to dredge the pizza dough in corn meal before I roll it out. Another trick I like to to do is shape the dough right on the pizza peel making it easier to transfer to the oven.

When you have the dough shaped, place it in your preheated oven and partially bake the crust.

Once the dough is shaped, pour about 1 cup of pumpkin puree mixture on the partially baked pizza crust and spread to cover the crust.

Sprinkle about 2 cups of arugula over the pumpkin puree and top with sliced havarti cheese. On air, I used a horseradish havarti cheese.

You can use as much arugula and cheese as you want.

Place the pumpkin pizza back in the oven for about 15 minutes or until the crust has browned and the cheese has melted.

Remove from the oven, serve and enjoy!
