Spicy Cucumber Kani Salad
This delicious Japanese inspired salad is a quick and easy idea for dinner. It uses imitation crab and is served on top of a fresh bed of lettuce. Cool and refreshing, you’re gonna love this salad!
Ingredients
3-4 cups separated imitation crab sticks
1 cucumber, julienned
3 stick celery, julienned
3 carrot sticks, peeled and julienned
3-4 green onions, chopped
1/3 cups finely minced red onion
1 head lettuce, chopped
2/3 cups kewpie mayonnaise
3 tbsp ponzu sauce
2 tbsp mirin
1 tbsp sriracha sauce

In a large bowl, separate the imitation crab sticks into little strands adding them to the bowl along with the julienned cucumber, celery sticks, carrot sticks, green onions and minced red onion. Gently combine everything together.

Add the chopped lettuce to a large plate and set aside.

In a medium size bowl, combine the kewpie mayonnaise (can use regular mayonnaise), ponzu sauce (can use soy sauce with 2 tsp orange zest added to it), 2 tbsp mirin vinegar and the sriracha sauce mixing it all together until well combine.

Pour the dressing over the imitation crab mixture and gently toss to coat. Transfer the mixture and arrange on top of the chopped lettuce. Adjust seasoning as needed, serve and enjoy!
