Garbanzo Bean “Tuna” Salad Sandwich
Here’s a twist on the classic tuna fish salad sandwich using garbanzo beans. I like this sandwich as much as a regular tuna fish sandwich.
Ingredients
3 cups cooked Garbanzo beans
1/2 cup finely diced celery
1/3 cup finally diced red onion
1/3 cup chopped parsley
3 garlic cloves, minced
1 tbsp dill
1 tsp chili powder
1 tbsp lemon pepper
2 tsp salt
Favorite sandwich bread
Sprouts
Lettuce
Tomatoes, sliced
For the sauce:
1/2 cup Ranch dressing
1/3 cup tahini
1/3 cup mayonnaise
1/3 cup sour cream
Instructions

Rinse the garbanzo beans and place them in a large bowl. Using a potato masher, mash the garbanzo together.

I like to chop the celery, red onion, parsley and garlic in the food processor. Add the mixture to the mashed garbanzo beans.

To make the sauce, in a separate bowl, mix the Ranch dressing, tahini sauce, mayonnaise, sour cream, dill, chili powder, lemon pepper and salt together until well blended.

Pour the sauce over the mashed garbanzo beans and fold everything together until well combined.

Divide and spread the garbanzo bean mixture between 4-5 slices of bread. Top with fresh sprouts, lettuce and a couple of slices of fresh tomatoes. Top each sandwich with a second slice of bread, serve with your favorite sides and enjoy!
