Asian Lemon Chicken
Here’s a delicious chicken recipe that’s easy to make for dinner. Crispy chicken pieces coated in a lemon sauce served with rice and vegetables will be your dinner time treat!
Ingredients
4 boneless skinless chicken breasts, cubed
2 eggs, beaten
1 cup flour
1/2 cup cornstarch
1/3 cup lemon juice
Zest of one lemon
1/3 cup sugar
1/2 cup water
2 tsp cornstarch
Oil for deep frying
Sesame seeds, chopped green onions for garnish
Salt and pepper to taste
Instructions

In a small bowl, whisk the eggs with a little salt/pepper and set aside.

In a small bowl, whisk the flour and cornstarch together and set aside.

Heat the oil for deep frying (about 4 inches in a pan) to about 375 degree’s.

Dip the cubed chicken breasts in the egg mixture and then dredge them in the flour mixture. Deep fry the chicken until they are golden brown and fully cooked through (165 degrees internally). Remove the chicken pieces from the fryer and set aside.

In a small sauce pan, whisk the lemon juice, lemon zest, sugar, water, cornstarch (2 tsp) together until fully combined. Bring the mixture to a boil while stirring and let it simmer for a couple of minutes.

Pour the lemon sauce over the chicken pieces, toss to coat and serve with rice and your favorite vegetables. Enjoy!
