Kung Pao Chicken

Ingredients
3 chicken breasts, cubed into bite size pieces
Chicken Marinade:
2 tbsp soy sauce
1 tbsp rice vinegar
2 tbsp cornstarch
Sauce:
3 tbsp soy sauce
1 tbsp rice vinegar
1/4 cup chicken broth
1 tbsp sugar
1/2 tsp toasted sesame seed oil
1 tbsp corn starch
2 garlic cloves, minced
1 tbsp minced pickled jalapeño peppers
1/2 cup peanuts
Oil for deep frying
Instructions

In a large bowl combine chicken marinade ingredients and cubed chicken. Allow to marinade for about an hour.

In a separate bowl combine ingredients for the sauce: soy sauce, rice vinegar, chicken broth, sugar, toasted sesame seed oil, corn starch, minced pickled jalapeños, peanuts and minced garlic. Whisk everything together and set aside until ready to use.

Heat about 2 cups of oil to 370 degree’s in a large pan and deep fry marinated chicken until golden and thoroughly cooked through. Remove from the oil and set aside.

Heat a large sauté pan on the stove. Re-stir the sauce mixture and add it to the hot pan. It'll thicken up pretty quick so be sure to stir it. Add the cooked chicken and sauté for about 1 minute to thoroughly cook out the starch flavor. Be careful not to burn the sauce.
