Baked Chicken Chimichangas
I love chimichangas but I don’t like having to deal with the hot oil used to deep fry them in. These baked chicken chimichangas are tasty and easy to make.
Ingredients
3-4 chicken breasts cooked and shredded
1 cup prepared salsa
1 tsp ground cumin
1 tsp oregano
1/4 cup diced pickled jalapeños
1 cup shredded Mexican style cheese blend
2 green onions chopped
8 flour tortillas
Vegetable spray
Garnish (diced tomatoes, guacamole, prepared salsa, shredded cheese etc.)

Preheat your oven to 450 degree’s.

I like to shred my cooked chicken breasts in the food processor with the dough blade. However, you can shred them by hand too.

Add the shredded chicken to a large bowl with the salsa (I used Salsa Queen Gourmet Pico blend), cumin, oregano, pickled jalapeños and shredded cheese. Mix everything together to combine. Sometimes, I’ll add a can of drained black beans to the mixture too.

Divide the chicken mixture between the flour tortillas and roll them up like a “burrito” and place them seam side down on a baking sheet sprayed with vegetable spray.

Spray each “burrito” liberally with vegetable spray and place them in the oven for about 20 minutes or until they are crispy.

Remove from the oven and top with your favorite garnish, serve with a handful of chips and salsa on the side and enjoy!
