Chili Verde Chicken
Chili verde is a delicious sauce that can be made into enchiladas, burritos, tacos or anything you would like. With this recipe, I make a simple chili verde chicken that can be serve numerous ways. I like to make some Mexican rice and serve it on the side with this dish!
Ingredients
6 pasilla peppers, roasted
2 roma tomatoes
1/2 cup chopped onion
2 tbsp garlic powder
1 tbsp cumin
1 tbsp salt
1 bunch cilantro
3-4 cups chicken stock
4 chicken breasts, fully cooked

Roast the papilla peppers over an open flame until the skin is blackened. Place them in bag and let them sweat so you can easily scrape off the charred skin of the pepper, Rinse them off after removing the charred skin, de-seed them and place them in your blender.

To the blender add the roma tomatoes, chopped onion, garlic powder, cumin, salt and cilantro. Puree everything together until smooth and well blended. Taste and adjust salt as needed.

Shred or chop up the cooked chicken breasts and mix with a couple of cups of the chili verde sauce, set aside.

To serve, Spoon some of the chicken and chili verde sauce onto a corn tortilla, top with whatever you would like. I like to serve a spoonful of Mexican style rice on the side. Enjoy!
