Basic Banana Cream Pie
Banana cream pie is one of my favorite pies! Many times as a child, I would request a banana cream pie in lieu of a cake for my birthday. Through the years I’ve always loved this delicious pie and have to say it is still my number one favorite pie!
Ingredients
For the pie crust:
3 cups flour
1 cup lard
1 tsp salt
1 cup cold water
For the Filling:
2 bananas, sliced
1 pkg instant banana cream pudding (4 ounce pkg)
2 cups milk
1 1/2 cup whipping cream whipped
1 tsp vanilla
1/3 cup sugar

To your food processor, add the flour, lard and salt. Pulse everything together until it resemble course corn meal.

Transfer the flour mixture to a bowl and add the 1 cup of cold water. Using a fork, gently mix everything together until combined. If needed, use your fingers to finish combining the dough into a loose dough.

Divide the dough into four parts, roll out and place each rolled out dough piece on an inverted pie tin. Using a fork, poke the dough crust all around and bake in a 350 degree oven for about 15 minutes. Remove, cool and invert into the pie tin for your banana cream pie. This crust will make approximately 4 single crust pies or two double crust pies. This will vary depending on how thick or thin you like your pie crusts.

Once the pie sell is cooled and inverted back into the pie tin, evenly spread the sliced bananas around the bottom of the pie shell.

In a separate bowl, add the package of instant pudding along with the milk and whisk together for 2 minutes. If instant pudding directions are different, follow the package directions to make your brand of pudding.

Pour the prepared instant pudding into the pie shell covering the banana slices.

To finish the pie in a large bowl, whisk the whipping cream, vanilla and sugar together until you get stiff peaks. Spread the whipped cream on top of the banana cream pie, chill for an hour, serve and enjoy!
