Norwegian Style Spice Cookies
These delicious cookies are the cookies I remember when I was a child. My mom really remembers these spiced cookies and frequently tells stories about her Norwegian father and his cardamom flavored cookies.
Ingredients
1 cup softened butter
1 1/2 cups sugar
2 eggs
1 tsp vanilla
2 tsp cinnamon,
2 tsp ground ginger
1 tsp ground cloves
1/2 tsp ground nutmeg
1 tsp ground cardamom
1 tsp salt
3 cups flour
Instructions

In the bowl of your mixer cream together the butter and sugar for 3 minutes or until light and fluffy.

Add the eggs and vanilla to the mixer and mix together for 2-3 minutes.

Add the cinnamon, ground ginger, clover, nutmeg, cardamom and salt. Mix everything together until well combined.

Add the flour and mix until well combined.

On a floured work surface roll the dough out to about 1/4 inch and cut with round cookies cutters. Transfer the cut dough onto a parchment lined baking sheet and bake in a pre-heated 350 degree oven for about 10 minutes or until edges begin to brown.

Remove from the oven, cool, serve and enjoy!

If the dough is too soft, refrigerate it for an hour before cutting the cookies. Grandma used to brush the unbaked cookies with an egg wash before baking if you want to be truly authentic.
