Norwegian Style Crepes
Here’s a delicious crepe recipe that’s sure to tantalize even the pickiest of eaters. Serve them with Lingonberry jam for a Scandinavian twist or however you’d like to enjoy them.
Ingredients
3 eggs
1 1/2 cups milk
1 cup flour
1/4 tsp salt
1 tbsp sugar
Fillings of your choice
Instructions
1
In your blender, combine the eggs, milk, flour, salt and sugar. Puree everything together until well blended.
2
Heat a small non-stick skillet on your stove and lightly spray with vegetable oil.
3
Pour about 1/4 cup of the batter into the hot pan and swirl the pan to allow the batter to evenly fill the bottom of the pan. If needed, pour more batter into the pan.
4
Cook the crepe until the top is no longer yet looking and there are no bubbles. Some people like to flip the crepe over, however, I like to simply fill this top portion, folding the crepe over so the browned side is visible.
5
Remove the crepe from the pan and fill the filling of your choice. If available, use some delicious Lingonberry jam. Serve and enjoy!
