Creamy Chicken Pasta
This creamy chicken pasta is easy to make and so delicious. Use any type of large noodle pasta for this dish. You’ll fall in love with the flavors in this pasta dish while your family and friends clean their plates and ask for more!
Ingredients
6-8 strips of bacon
2 chicken breasts, cut in half lengthwise
1 cup chopped onion
1 tbsp minced garlic
1/2 cup white wine
4-5 roma tomates, chopped
1 1/2 cups half and half
1 tsp red pepper flakes
1 tbsp Italian Seasoning Herb Blend
1 cup fresh ricotta cheese
1 cup shredded parmesan cheese
2 cups spinach
1 pound large noodle pasta, cooked and rinsed
1/2 cup chopped Italian Parsley
Season Salt to taste
Black Pepper to taste
Instructions

Heat a large pan on the stove and render the fat from bacon (cook the bacon for about 5 minutes). Remove the bacon and place it on a paper towel lined plate and set aside.

Pan cook the chicken breasts in the bacon grease until golden brown and throughly cooked through. Remove from the pan and set aside.

Chop the cooked bacon into small pieces and add it to the pan along with the chopped onion and garlic; sauté everything together for a couple of minutes. Pour in the white wine to deglaze the pan and reduce the wine by half. Add the tomatoes and continue sautéing for an additional 2-3 minutes.

Add the half and half, red pepper flakes, Italian seasoning herb blend, black pepper and season salt to taste, bring to a boil and reduce by half. Add the shredded parmesan cheese and the ricotta cheese stirring for an additional 2 minutes.

To the sauce, add the spinach, wilt down the spinach while stirring for an additional 2-3 minutes.

Add the cooked noodles to the creamy sauce and carefully fold the cooked pasta into the sauce.

To serve, slice the cooked chicken breasts and lay them on top of the prepared pasta, sprinkle with chopped Italian parsley and additional shredded parmesan cheese to taste. Serve and enjoy!
