Carrot Cake
I love carrot cake in any form with cream cheese frosting. This delicious carrot cake recipe is great baked off in any form. Finish it off with cream cheese frosting for a delicious treat for your family and friends.
Ingredients
2 cups all-purpose flour
2 tsp. baking soda
1 tsp salt
1 tbsp ground cinnamon
1 tsp freshly grated nutmeg
1 tsp ground ginger
3 eggs
3/4 cup vegetable oil
3/4 cup buttermilk
2 cups sugar
2 tsp vanilla
1 (8-ounce) can drained crushed pineapple
2 cups grated carrots
1 cup flaked coconut
1 cup golden raisins
1 cup chopped walnuts
Instructions

Combine flour, soda, salt, cinnamon, nutmeg, and ground ginger. Set aside.

Flour and grease one 9X13 cake pan, two 10 inch rounds or line 24 muffin tins and set aside.

Combine eggs, oil, buttermilk, sugar, and vanilla; beat until smooth. Stir in flour mixture, pineapple, carrots, coconut, golden raisins and chopped nuts.

Pour batter into your prepared pans of choice.

Bake in a preheated 350° degree oven for approximately 30 minutes or until toothpick comes out clean. Times will vary depending on the type of pans you are baking the batter in.

Frost with my cream cheese frosting and enjoy!
