Thai Noodle Salad with Fresh Peanut Dressing
This delicious salad uses a fresh peanut butter dressing that truly makes it a favorite. I use rice noodles that look like fettuccine pasta and love to make this salad for family and friends.
Ingredients
For the Salad:
1 package thick rice noodles
1/4 head shredded green cabbage
1/4 head shredded purple cabbage
3 cups stir fry frozen vegetable mix, thawed
4 green onions chopped
1 bunch cilantro, chopped (optional)
1/2 cup roasted salted peanuts
Fresh Peanut Butter Dressing:
1 cup roasted salted peanuts
2 garlic cloves, peeled
1/3 inch piece fresh ginger, peeled
1/3 cup fresh orange juice
Juice from one lime
3 tbsp soy sauce
1/4 cup honey
1 tbsp toasted sesame seed oil
1 tbsp sriracha sauce or to taste
Salt to taste

Cook the rice noodles as directed, rinse in cold water once they are cooked, place the cooked/rinsed noodles in a large bowl.

To the noodles, add the shredded green and purple cabbage, stir fry vegetable mix, chopped green onions, chopped cilantro and the roasted salted peanuts.

Using your hands (make sure they are washed) toss the salad combing all of the ingredients, set aside.

To make the fresh peanut dressing, to your blender, add the the 1 cup of roasted salted peanuts. Blend until the peanuts turn into peanut butter. Scrape down the blender carafe as needed.

To the freshly made peanut butter, add the garlic cloves, fresh ginger, orange juice, lime juice, soy sauce, honey, toasted sesame seed oil, sriracha (to taste) blending everything together. Taste and adjust salt as needed.

Add the freshly made peanut dressing to the noodles and mix everything together to coat the salad. I use my freshly washed hands to toss the salad because it works best to combine and coat the salad with the freshly made dressing. Serve and enjoy!
