Southern Buttermilk Hush Puppies
Have a tasty treat from the South tonight for dinner. These hush puppies go great with coleslaw, pulled pork or any of your favorite dinner ideas.
Ingredients
1 cup buttermilk
1/4 cup vegetable oil
2 eggs
2 cups corn
1/2 cup diced onion
1 cup cornmeal
1 cup flour
1/4 cup sugar
1/2 tsp baking soda
1/2 tsp salt
Vegetable oil for frying

Preheat the oil to 365 degree’s.

In a large bowl, mix the buttermilk, vegetable oil and eggs together. Add the corn, diced onion, cornmeal, flour, sugar, baking soda and salt. Mix everything together until combined.

Using a large spoon or portion scoop, spoon the batter into hot oil and fry for about 6 minutes until golden brown and cooked all the way through.

If needed, bake the hush puppies in a 350 degree oven for about 10 minutes if the centers aren’t cooked through.

Serve with your favorite pulled pork and coleslaw, enjoy!
