Fish Burgers
Switch up dinners with these delicious fish burgers! Use any type of fish you’d like and serve with chips or your favorite sides and enjoy!
Ingredients
16 ounces canned tuna fish, drained
2 eggs
1/4 cup freshly chopped parsley
1/4 cup finely chopped red onion
1/4 cup Italian style bread crumbs
1 tbsp lemon or lime juice
1 tbsp finely chopped fresh basil
1/2 tsp red pepper flakes
1 large tomato sliced
For the dressing:
3 tbsp mayonnaise
1 tbsp lime or lemon juice
1/4 cup finely chopped basil
1 tsp salt
1 tsp black pepper

In a large bowl combine the drained canned tuna fish, eggs, chopped parsley, red onion, bread crumbs, citrus juice, freshly chopped basil and red pepper flakes. Mix everything together.

Heat a large sauté pan on the stove and add enough vegetable oil to lightly coat the bottom of the pan. Form 4-6 tuna patties and fry each patty 2-3 minutes on each side or until golden and holding together.

To make the dressing, combine the mayonnaise, lime juice, finely chopped basil, salt and pepper in a bowl and mix together.

To assemble the fish burgers, place a fish burger on a roll with some of the freshly made dressing, sliced tomato, onion (optional) and lettuce if desired. Serve and enjoy!
