Oakdell Egg Salad Sandwich
Need a delicious back to school lunch idea, why not a delicious egg salad sandwich with Oakdell Eggs.
Ingredients
6 hard boiled Oakdell eggs
1 tbsp dill relish
1 tbsp yellow mustard
1/4 cup minced red onion
1/4 cup mayonnaise
1 tbsp pickled jalapeños, minced
Carrot sticks
Celery Sticks
Radishes
Cherry tomatoes
Eight slices of sandwich bread
Salt and pepper to taste
Instructions

Hard boil 6 Oakdell eggs and let them cool. Once cooled, peel and place in a large bowl.

Add the dill relish, yellow mustard, minced red onion, mayonnaise and minced pickled jalapeños (optional). Mix everything together to combine while smashing the hard boiled eggs and mix everything together. Salt and pepper to taste.

Divide the egg salad between four slices of bread and top each with a second piece of bread. Cut each sandwich in half and serve with carrot and celery sticks, radishes and cherry tomatoes on the side. Enjoy!
