Fajitas
I love fajitas because they’re fast and easy to make and everyone loves them. If you need a quick dinner idea, look no further!
Ingredients
For the Marinade:
1/3 cup orange juice
2 limes, juiced
3 chipotles peppers in adobo sauce
3 garlic cloves
1 handful arugula or cilantro
2 tsp cumin
2 tsp salt
1 flank steak, about 2 pounds
For the Guacamole:
3 ripe avocados
1 cup fresh pico salsa (I used Salsa Queen Gourmet Pico Salsa)
For Fajitas:
2 red bell peppers, thinly sliced
1 large onion, sliced
Lime juice
Flour Tortillas
Favorite Salsa (I used Salsa Queen Salsas)
Instructions

To make the marinade, combine the marinade ingredients (except the flank steak) in the bowl of your food processor and pulse to combine everything together.

Pour the marinade and into a large resealable bag and add the flank steak. Seal the bag and refrigerator for couple of hours or over night.

When ready to serve, grill the marinade steak to your desired doneness. Remove from the grill and slice into thin slices. Set aside until ready to use.

To make the guacamole, cut the avocados in half and remove the flesh to a large bowl. Using a fork, mash the avocado and add the fresh pico. Gently mix everything together to combine. Set aside until ready to use. Adjust seasoning as needed.

Grill the sliced vegetables and set on a plate for service.

To assemble, heat the flour tortillas and serve with the sliced steak, grilled vegetables, guacamole and your favorite salsa. Serve the grilled steak, vegetables and guacamole with your favorite salsas on the flour tortillas with a fresh squeeze of lime juice and enjoy! I used Salsa Queens salsa to assemble mine.
