Pulled Pork Sandwich

Pulled Pork Sandwich

This delicious pulled pork sandwich uses my wonderful Kalua pork recipe from my cookbook, The Everyday Instant Pot Cookbook. Tossed with a freshly made pulled pork sauce and topped with a crunchy coleslaw, this sandwich is amazing!

Ingredients

4-5 pound pork roast
Hamburger buns or homemade bread
For the Pulled Pork Sauce: 1 cup ketchup
1/2 cup yellow mustard
1/3 cup brown sugar
3 garlic cloves, minced
1 tbsp cider vinegar
2 tbsp Worcestershire sauce
1 tbsp Cajun seasoning blend
For the Coleslaw: 2 cups shredded cabbage
1 cup chopped kale
1/3 cup diced red onion
1/2 cup mayonnaise
1 tbsp cider vinegar
2 tbsp sugar
salt and pepper to taste

Instructions

I cooked the pork roast following my recipe for Kalua pork in my cookbook, The Everyday Instant Pot Cookbook, page 85.

When the pork roast is finished and cooled enough to touch, pull/shred the pork and set aside.

To make the pulled pork sauce, simply combine all of the sauce ingredients into a sauce pan (ketchup, yellow mustard, minced garlic, cider vinegar, Worcestershire sauce, Cajun seasoning) and while stirring, bring to a boil. Reduce the heat and simmer the sauce for 5 minutes, remove from the heat and stir in the pulled/shredded pork stirring to combine. Set aside.

To make the coleslaw, add the shredded cabbed, kale and diced red onion to large bowl. To make this easier, many times I use a prepared cabbage and kale salad you buy at the store.

In a small bowl whisk the mayonnaise, cider vinegar and sugar together until well combined. Adjust the salt and pepper according to your taste and dietary needs.

Pour the mayonnaise mixture over the cabbage mixture and gently fold everything together to mix.

To assemble the sandwich, divide (between 6-8 sandwiches) and place the prepared pulled pork onto your homemade bread (can use hamburger buns too) and top with a portion of the coleslaw. Serve your sandwiches with chips or your favorite sides and enjoy!
