Beef Fried Rice
Fried rice is a favorite of so many, however, you may never have tried beef with it. I like adding leftover beef roast to my fried rice for a switch from pork.
Ingredients
4 cups cooked rice
1/3 cup diced onion
1/3 cup chopped green onion
3 garlic cloves, minced
1 cup chopped celery
1 bell pepper, chopped
3 eggs scrambled and coarsely chopped
1 cup cooked chopped beef roast
Soy sauce and toasted sesame seed oil to taste
Salt and Freshly cracked pepper to taste
Olive oil
Instructions

Heat a large sauté pan on the stove and add enough oil to lightly coat the bottom of the pan. Add the onion, green onion, and garlic. Sauté until fragrant (about 2 minutes).

Add the celery, scrambled eggs and chopped beef roast sautéing for about 2 minutes.

Add rice and stir fry for about 4 minutes.

Add the fried rice to a bowl and top with pulled pork.

Season with soy sauce, salt and pepper. Serve and Enjoy!
