Salmon Chowder
Chowder of any kind was a treat at my house growing up. Grandma would sometimes make a corn chowder and mom would make salmon chowder along with the traditional clam chowder. So enjoy this salmon chowder like I do!
Ingredients
1 pound chopped bacon
3-4 medium potatoes, peeled and diced
1 medium onion, chopped
1 bunch green onions, chopped
2 cups chopped mushrooms
4 celery stalks, chopped
2 carrots, peeled and chopped
10 ounces salmon, chopped
1/2 cup flour
1/2 gallon milk
2 chicken bullion cubes
salt and pepper to taste

Heat a large pot on the stove and add the chopped bacon, rendering down the fat. Drain off bacon fat keeping about 1/4 cup of bacon grease in the pot.

Add the diced potatoes, chopped onion, green onions, mushrooms, celery stalks and carrots. Sauté for approximately 3 minutes.

Add the salmon and mix to combine and sprinkle the mixture with the flour. If desired, add 1/2 cup capers and 1/4 cup freshly chopped dill. Stir to incorporate the flour.

Stir in the milk and add the bullion cubes. Bring to a boil, reduce the heat to simmer and continue cooking for about 20 minutes, stirring on occasion. Taste for salt and pepper and adjust as needed.
