Lentil Sloppy Joes

Ingredients
3 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 medium onion, diced
2 cups cooked lentils
2 small cans tomato sauce, 8 oz cans
2 tbsp apple cider vinegar
Sugar to taste
Salt and pepper to taste
Your choice of buns
Olive oil
Instructions

Heat a large sauté pan on the stove and add enough olive oil to lightly coat the bottom of the pan.

Add the minced garlic, diced bell peppers and onion and sauté for approximately 5 minutes or until onions are translucent.

Add cooked lentils, salt and pepper to taste and cook for an additional 2-3 minutes to heat the lentils.

Add the tomato sauce, apple cider vinegar and sugar to taste (if desired). Mix everything together and serve on your favorite buns. Enjoy!
