4 cups chocolate pieces (can use dark, milk or white chocolate)
4 cups large roasted and salted peanuts
1 cup chopped dried fruit (optional)

Instructions

1
Making chocolates requires a basic understanding of tempering chocolate. I have posted an blog post on how to temper chocolate, you can find it here: www.cookingwithchefbryan.com/how-to-temper-chocolate/
2
In a large microwave safe bowl, microwave chocolate pieces for 15 second intervals until it has melted and the temperature is about 130 degree’s. You can also melt the chocolate in a double boiler too. Once the chocolate has melted, let it cool to about 90 degree’s and add the peanuts and chopped dried fruit (if desired) mixing everything together until well coated.
3
Spoon the mixture out onto a pieces of parchment paper letting the “drop” on the paper. You an adjust the size of your clusters anyway you choose, bigger or smaller.
4
If your chocolate is in temper, it should set within 5 minutes or so in a cool room about 65 degree’s.
5
Once the clusters have set, store in an airtight container in a cool room, serve and enjoy!
