Gluten Free Vegan Chocolate Cake

Gluten Free Vegan Chocolate Cake

I’m wondering if I actually like this cake recipe over any chocolate cake. You decide if a gluten free vegan chocolate cake is a new favorite for you!

Ingredients

2 cups gluten free flour
1 1/3 cups sugar
1/2 cup cocoa powder
1 tsp salt
1 tsp xantham gum
2 tsp baking powder
2 tsp baking soda
1 cup vegetable oil
1 can coconut milk (13.5 fl ounce can)
1/4 cup water
2 tbsp rice vinegar

Instructions

Preheat your oven to 350 degree’s.

Spray two 9 inch cake pans with vegetable spray and dust with gluten free flour. Set aside.

In a large bowl, combine all of the dry ingredients together (gluten free flour, sugar, cocoa powder, salt xantham gum, baking powder and baking soda). Using a whisk, mix all the dry ingredients together until well combined.

In a separate bowl combine the vegetable oil, coconut milk, water and rice vinegar. Whisk the wet ingredients together to combine.

Add the wet ingredients to the dry ingredients and mix together until fully combined to create the cake batter,

Divide the batter between the two prepared cake pans and place them in the preheated oven. Bake for about 35 minutes or until a toothpick comes out clean.

Remove the cake when baked from the oven, allow it to cool, remove from the cake pans and decorate as needed for your dietary needs I frosted with a non-dairy whipped topping and drizzled with a chocolate ganache made from heating the contents of 1 can coconut cream (13.66 oz can) to a boil and pouring it over 2 cups of dark chocolate disks,
