Beef Stew with Vegetables
Easy and delicious, stew is always a great dinner choice on a cold evening!
Ingredients
2-3 pounds beef stew or 2 pounds ground hamburger
1 large onions, chopped
4 carrots, chopped
4 celery stalks, chopped
3 medium potatoes, diced
1 yam, peeled and diced
1 can Italian style tomato paste ( 6 oz. )
8 cups beef stock
2 tbsp flour
1 cup beef stock
Vegetable oil
salt and pepper to taste

Heat the instant pot on “sauté” and add enough oil to coat the bottom of the pot or heat a large pot on the stove and add enough oil to lightly coat the bottom of the pan.

To the heated pot, add the beef stew meat or hamburger, chopped onions, carrots, celery, potatoes and yams. Sauté for 5-10 minutes.

Add the tomato paste and beef stock. If cooking in the Instant Pot, place the lid on and pressure cook on high for 15 minutes. If cooking on the stove, stir everything together, place the lid on the pot and reduce the heat to a simmer and cook for about 1 hour.

When the Instant Pot is finished, allow the pressure to release naturally.

Just before serving, mix the flour and one cup of beef stock together. Add to the Instant Pot and use the “sauté” mode to bring to a boil to thicken the stock. If using a stove top pot, add the flour mixture to the pot and bring to a boil to thicken while stirring. Adjust salt and pepper as needed.
