Sausage, Potato and Broccoli Cheddar Soup
This wonderful potato soup is like eating a loaded baked potato in a bowl. Perfect for dinner whip up a batch of this soup tonight.
Ingredients
1 pound sausage
3 garlic cloves, minced
1 tbsp onion powder
2 tsp smoked paprika
6-8 medium size potatoes, chopped
1/4 cup flour
8 cups chicken stock
2 cups broccoli florets, chopped
6 celery stalks, chopped
2 cups cream
2 cups shredded sharp cheddar cheese
Salt and pepper

Heat a large pot on the stove and fully cook the sausage.

Add the minced garlic, garlic powder, smoked paprika and chopped potatoes. Sauté for 5 minutes or until fragrant.

Sprinkle with flour mixing everything together. Add the chicken stock and bring to a boil. Continue cooking for about 10 minutes or until the potatoes are fork tender.

Using a potato masher, gently mash the potatoes in the broth. Add the broccoli and celery stalks bringing the soup back to a boil. Cook an additional 10 minutes or until the broccoli and celery are tender.

Pour in the cream and shredded sharp cheddar cheese. Stir to incorporate everything and help the cheese melt into the soup. Taste for salt and pepper adjusting as needed.
