Quick and Easy Taco Soup
This soup is so easy to make and delicious. Use your ingredients in the fridge or pantry and save a trip to the grocery store.
Ingredients
1 medium onion, diced
4 garlic cloves, minced
1 pound ground beef
1 package taco seasoning (can use salt free)
1 bouillon chicken seasoning
1 can diced tomatoes (28 ounce)
1 can garbanzo beans (about 15 oz)
1 can great northern beans (about 15 oz)
1 can kidney beans (about 15 oz)
1 can black beans (about 15 oz)
1 can corn (about 15 oz)
1 can cut green beans (about 15 oz)
1 can diced green chili (about 4 oz)

Instructions

Heat a large pot on the stove and add enough oil to lightly coat the bottom of the pan.

Add the diced onions and garlic, sautéing for a few minutes until the onions and garlic and fragrant.

Add the ground beef and throughly cook through. Add the taco seasoning package along with the chicken bouillon cube.

Mix the taco seasoning into the ground beef while brushing the bouillon cube.

Add the canned goods, liquid and all (do not drain the cans use the liquid from the can).

Bring the soup to a boil, reduce the heat and simmer for 5 minutes.

Serve with corn chips on the side or in the I like to put the chips in the soup bowl and paddle the soup over the chips. Sprinkle with chopped cilantro and shredded cheese if desired. Serve and enjoy!
