Hollandaise Sauce
Creating simple foods with an amazing sauce can take an ordinary dish to an amazing dish. Serve this hollandaise with eggs benedict, poached fish or your favorite dinners.
Ingredients
For the Flavoring:
1 cup dry white wine
2 tsp white wine vinegar
1 small onion, thinly sliced
8-10 black peppercorns
2 bay leaves
For the Hollandaise Sauce:
4 egg yolks
1 cup melted butter
2 tsp fresh lemon juice
salt to taste

Add the flavoring ingredients to a small sauce pan and bring to a boil. Reduce liquid to about 1 tbsp of liquid. Remove from the heat and set aside until ready to use.

To make the hollandaise sauce, add the 4 egg yolks to a stainless steel mixing bowl and place over a pan of boiling water while whisking the yolks. Continue whisking until they are light and fluffy.

Remove from the heat and add the reduced flavoring while whisking. Drizzle the melted butter into the sauce while whisking. Finish with the fresh lemon juice and adjust salt as needed. Serve as needed. On air, I served the hollandaise with poached salmon, butter tossed potatoes, carrots and green beans.
