Garbanzo Bean Salad

Garbanzo Bean Salad

Fresh, cool and perfect for summer…this salad is a must! Mix and match the beans and have some fun with this delicious bean salad.

Ingredients

2 cans garbanzo beans (15 oz cans)
1 cucumber, peeled and diced
1 avocado, diced
1 bunch parsley, chopped
3 roma tomatoes, diced
1/3 cup diced red onion
3 garlic cloves, minced
1/3 cup extra virgin olive oil
1 lemon, juiced
1 lime, juiced
2 tsp season salt
1 tbsp black pepper

Instructions

Drain and rinse the garbanzo beans and let them drain and dry a little bit.

To a large bowl and add the rinsed and drained garbanzo beans, diced cucumber, diced avocado (seeded and rhine removed), chopped parsley, dice roma tomatoes, red onion and minced garlic.

Gently fold everything together to combine.

Add the extra virgin olive oil, juice of one lemon and lime, season salt and black pepper. Gently fold everything together to combine.

Cover and chill for 2 hours before service. Serve with your favorite artisan bread and enjoy!
