Zucchini Bread

Old Fashion Zucchini Bread

As a child, great grandma, grandma and mom made this delicious zucchini bread. You can toast it, spread butter on it or just eat it plain. However you like to eat it, have some fun and make this wonderful recipe. Mix it up with smaller bread pans or muffin tins.

Ingredients

3 large eggs
1 cup vegetable oil
2 cups shredded zucchini
2 cups sugar
1 tbsp vanilla
1 tbsp cinnamon
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 cups flour
1 cup chopped walnuts (optional)

Instructions

This recipe is best made by hand in a large bowl. Combine the eggs, vegetable oil, shredded zucchini, sugar and vanilla in a large bowl and mix everything together until well blended.

Add the remaining ingredients (cinnamon, salt, baking soda, baking powder, flour and walnuts) into the bowl and mix everything together until incorporated.

Spray two bread pans (two pound loaf pans) with vegetable spray and divide the batter between the two pans, filling each pan about 3/4 of the way full.

Bake in a 340 degree oven for 40 minutes or until a toothpick comes out clean. Every oven is different, so cook according to your oven.

Remove from the oven and let the zucchini bread cool in the pan. Once cooled, remove from the pan, serve and enjoy!
