French Onion Beef Stew
Bring two delicious ideas into one dish with this French onion beef stew.
Ingredients
4 cups diced beef, cooked
1 large onion, chopped
1 pkg peas and carrots, 12 oz package
1 can tomato paste (6 0z)
4-5 large tomatoes, diced
1/3 cup flour
6-8 cups beef stock
6 slices, french bread
3 cups shredded cheese
Vegetable oil

Heat a large pot on the stove and add enough oil to lightly coat the bottom of the pot.

Add the diced beef and onion to the pot. Sauté for about 5 minutes.

Add the package of peas and carrots along with the diced tomatoes and sauté for an additional 3-4 minutes.

Sprinkle the mixture with flour and add the tomato paste, mixing everything together.

Add the beef stock and bring the stew to a boil, reduce the heat and simmer for 15 minutes.

While the stew is simmering, slice the french bread into thick slices.

Dived the stew between 6 oven safe bowls. Place a slice of french bread on top of each bowl and divide the shredded cheese over the top of the bread slices and place the doughs onto a baking sheet.

Place the baking sheet under the broiler to melt the cheese. Remove from under the broiler, serve and enjoy!
