Warm Spinach Salad

Warm Spinach Salad

This recipe is a version of a dish my grandma used to make when I was little. The tangy red wine vinegar dressing created from the bacon drippings really makes this salad amazing. Serve with your favorite artisan bread or other salad additions.

Ingredients

6 cups wash spinach leaves
1 cup diced bell pepper
1 cup diced cucumber
1/3 cup diced onion
10 bacon strips
1/3 cup red wine vinegar
1/4 cup sugar
2 tbsp dijon mustard
4 hard boiled eggs
salt and pepper to taste

Instructions

In a large bowl add the prepared spinach leaves, diced bell pepper, cucumber and onion. Set aside until ready to use.

In a large sauté pan, cook the bacon, once cooked remove and set on a plate with paper towels to drain.

To the bacon drippings, add the red wine vinegar, sugar and dijon mustard. Stir to de-glaze the pan and mix everything together. If needed, turn the heat on the pan for a bit to help de-glaze.

Add the dressing to the spinach, toss to coat. Divide between 4 plates along with the hard boiled eggs. Serve with your favorite artisan bread and enjoy!
