Spudnuts

Get ready for a delightful culinary adventure with our Spudnuts recipe – the perfect combination of fluffy mashed potatoes and sweet, golden goodness. These delectable treats will satisfy your cravings in every bite, and they’re surprisingly easy to make. Let’s dive into the world of Spudnuts!

 

Ingredients

1 cup mashed potatoes
2 large eggs, beaten
1 cup sugar
1 cup milk
1/4 cup melted butter
1 1/2 tbsp baking powder
1 tsp. salt
1 tbsp vanilla
6 1/2 cups flour, more or less
For the Donut Glaze: 2 cups powder sugar
1 tsp vanilla
1/2 cup milk

Instructions

In a large mixing bowl, combine Idaho mashed potatoes, beaten eggs, sugar, milk, melted butter, baking powder, salt, and vanilla. Mix until well combined.

Gradually add flour until the dough is firm enough to roll out. Begin with 1 cup of flour and mix it into the dough. The flour is crucial; you want a manageable, rollable dough. If it becomes too stiff, add a touch more milk.

Knead the dough until it's smooth. Cover it with a clean cloth and let it rest for 10 minutes to relax.

Roll the dough out to about 1/2 inch thickness and cut out your desired shapes. Allow them to rest for about 5 minutes.

Heat vegetable oil (about 2-3 inches) to 375 degrees Fahrenheit. We recommend using a deep-sided frying pan with temperature control.

Deep fry the Spudnuts for approximately 2-3 minutes on each side until they turn a delightful golden brown and cook through. Place them on paper towels to drain.

Prepare the powdered sugar glaze by mixing powdered sugar, vanilla, and milk until well combined. Dip the Spudnuts into the glaze and let them drain on a cooling rack. Once set, it's time to savor and enjoy!

For an extra touch of sweetness, toss your Spudnuts in sugar. Put 1/4 cup of sugar in a large resealable bag, add the Spudnuts, and give them a good shake.
