Rosemary and Potato Pizza
Pizzas are the worlds versatile pies! This potato pizza is delicious as it’s own pizza or served as a side dish with a wonderful steak or roast. However you choose to serve it, enjoy!
Ingredients
For the Dough:
5-6 cups flour
2 tsp instant yeast
1 1/2 tbsp sugar
2 tsp salt
2 cups water
1/4 cup extra virgin olive oil
For the Pizza:
2 cup shredded mozzarella cheese
2 medium size potatoes, peeled if necessary
1/4 cups freshly chopped rosemary
Salt and pepper taste
Extra Virgin Olive Oil

To make the dough, In the bowl of a food processor, place the flour, instant yeast, sugar and salt. Pulse to combine the ingredients.

Add the water and the extra virgin olive oil. Pulse the ingredients together just until they come together. If needed, add additional water.

Remove the dough from the food processor, shape into a ball and place in a greased bowl, cover with a clean dish towel and allow the dough to double in size.

Once doubled, shape the dough as desired and use for your favorite pizza.

To assemble the pizza, preheat your oven to 450 degreeās. If you have a pizza stone place it in the oven to heat up with it.

Create a 10-12 inch round of dough for your pizza as thin as you can get it. Be sure to work on a well floured surface to prevent sticking.

Once the pizza round is created, sprinkle the shredded mozzarella cheese over the pizza dough round.

THINLY slice the potatoes (which have been washed and peeled if necessary) and arrange them slightly overlapping all over the top of the pizza. It reminds of placing pepperoni around the pizza but much closer together.

Sprinkle the freshly chopped rosemary over the potatoes, sprinkle with salt and pepper. Lastly, drizzle with some good extra virgin olive oil.

Place in your preheated oven on a pizza round, on your pizza stone or on a baking sheet and bake for approximately 15-20 or until the crust is dark brown.

Remove from the oven, lightly drizzle with additional extra virgin olive oil, slice, serve and enjoy!
