Pork Burrito with Homemade Salsa Verde

Pork Burritos with Homemade Salsa Verde

Delicious and easy to make, these pork burritos with homemade salsa verde will become a staple around your house. the salsa verde also makes a great dipper for chips at a party!

Ingredients

For the Salsa Verde: 1 pound tomatillos
1 anaheim pepper
6-8 roasted garlic cloves
2 tsp cumin
1 bunch cilantro, stems removed
salt and pepper to taste
For the Pork Burritos: 1 pound cooked pork roast
2 cups refried black beans
4 cups cooked rice
2 cups shredded cheese, your choice
6-8 flour tortillas

Instructions

Line a baking sheet with foil, set aside.

To make the salsa verde, wash and remove the husks and stems from the tomatillos.

Slice the tomatillos in half and place the them cut side down on the prepared baking sheet.

Do the same with the anaheim pepper and then place the garlic cloves onto the prepared baking sheet too.

Place the prepared baking sheet under the broiler and broil until tomatillos are slightly “charred”. Remove from the oven and let them cool.

Transfer the tomatillos, pepper and garlic cloves (juice and all) to your blender along with the coming, cilantro and salt/pepper to taste. Blend mixture together to create a delicious salsa.
