Popcorn Chicken Rice Bowls

Popcorn Chicken Rice Bowls

This delicious popcorn chicken is so good and fun to make. I like to turn them into a yummy rice bowl with kimchi (because I like kimchi) and broccoli. Use any kind of vegetable you cheese and then drizzle your favorite sauce over the popcorn chicken.

Ingredients

4 chicken breasts
1 tbsp garlic powder
1 tbsp season salt
1 tbsp onion powder
1 tsp cayenne pepper
1/3 cup cornstarch
1 large egg
4 cups panko bread crumbs
6 cups cooked rice
4 cups cooked broccoli
1 cup prepared kimchi
Oil for frying

Instructions

Cut the chicken breasts into bite size pieces and place them in a large bowl.

Sprinkle the chicken with garlic powder, season salt, onion powder, cayenne pepper and cornstarch mixing everything together to combine.

Add the egg to the chicken and mix everything together to coat the chicken well.

Place the panko bread crumbs in a large re-sealable bag. Toss the chicken pieces in the bread crumbs and fry them until they are golden brown and the internal temperature is 165 degree’s.

Divide the rice, popcorn chicken, broccoli and the kimchi between four bowls. Drizzle a “fry sauce” over the popcorn chicken (1/2 cup ketchup, 1 cup mayonnaise mixed together).

Serve the popcorn chicken bowls with your favorite beverage and enjoy.
