Marinated Steak Dinner with Cheddar Biscuits and Onion Rings

Marinated Steak Dinner with Cheddar Biscuits and Onion Rings

This delicious dinner idea is perfect for Mother’s Day or anytime of the week. The simple marinade works with any steak of chicken dish. Onion rings are a wonderful side with this steak and a soft cheddar biscuit is the perfect compliment to finish off this marinated steak dinner.

Ingredients

For the Cheddar Biscuits: 2 cups self-rising flour
1 stick butter (8 tbsp)
1/4 cup sugar
1 tsp salt
1 cup shredded cheddar cheese
1 1/4 cup Sprite or 7-Up
For the Onion Rings: 2 cups self-rising flour
3/4 cup corn starch
1/4 cup Franks Red Hot dry seasoning
1/2 tsp smoked paprika
1 1/2 cups Sprite or 7-Up
4 cups Panko bread crumbs
2 large yellow onions peeled and sliced into 1/4 inch slices and separated
For the Steak: 1 hanger steak, cut into 4 equal strips
1 cup soy sauce
1 cup Sprite or 7-Up soda
1 tbsp freshly grated ginger
For the Utah Dipping Sauce: 1/2 cup mayonnaise
1/2 cup ketchup
1/4 cup dill pickle relish
Salt and pepper to taste

Instructions

To make the cheddar biscuits: I like to freeze my butter so it’s very cold.

To a large bowl add the self-rising flour, sugar and salt mixing everything together until combined.

Using a grater, grate the cold butter into the flour mixture and add the shredded cheese. Gently fold the flour, grated butter and cheese together to combine.

Add the Sprite or 7-Up to the flour mixing it into a soft bowl. If you need to adjust the liquid or flour feel free to do so.

Sprinkle your work surface with flour and dump the dough out of the bowl and onto your work surface. Roll the dough out into a 12x6 rectangle (roughly) and square off the edge of the dough with a bench scrape or a flat spatula. Fold the dough over on itself and than rotate the dough a quarter turn clockwise. Repeat the rolling and rotating 5 more time until the last roll out, cut into 12 even squares and place them on a parchment lined baking sheet.

Bake in a preheated 350 degree oven for about 25 minutes or until golden brown. Remove from the oven and serve as needed.

To make the Onion Rings: Heat about 3 inches of oil in a large pot to 350 degree’s. To a large bowl whisk the self-rising flour, cornstarch, Franks Red Hot Seasoning blend and smoked paprika to combine. Add the Sprite or 7-Up and whisk together into a smooth batter about the constancy of a pancake batter.

Add the onion rings to a large re-sealable bag and pour the coating into the bag. Carefully mix the coating around the onion rings in the bag. Once the onion rings are coated pour them into large colander you have seated in a bowl and letter the batter drain off of them.

Add the Panko bread crumbs to large re-sealable bag and place about 10 coated onion rings into the bread crumbs. Seal the bag and gently shake to coat the onion rings with the bread crumbs.

Place the onion rings in the hot oil and fry until they are golden brown (about 3-4 minutes). Remove the onion rings from the oil and let them drain on a paper towel lined plate. Continue coating and frying the onion rings until finished. Set aside to serve with the steaks.

To make the marinated steaks: In a large bowl, combine the soy sauce, soda and freshly grated ginger, stir everything to combine. Add the hanger steak strips and marinate for at least 4 hours or over night in the refrigerator.

Grill the steaks for about 4 minutes on each side or until the your desired doneness is reached. Set aside to rest until ready to serve.

To make the Utah Dipping Sauce: Combine the mayonnaise, ketchup, dill relish, salt and pepper in a bowl and mix together to combine. Adjust salt and pepper to taste, set aside until ready to serve.

Serve the marinated steaks with the freshly baked cheddar biscuits, onion rings and homemade Utah Fry/Dipping sauce on the side. Enjoy!
