Loaded Flatbread

While traveling through Italy I tried this amazing flatbread dish that is just like a pizza but was called a load flatbread. Serve with any kind of fish you like, I’m using pan fried cod fillets with a tapenade and cheese. Be creative and have fun creating this delicious flatbread recipe. Ingredients

1 batch pizza dough
4-5 cod fillets
1 cup flour
2 cups shredded mozzarella cheese
salt and pepper to taste
vegetable oil
For the Tapenade: 2 tomatoes, diced
1 cup chopped sun dried tomatoes
1 bunch green onions, chopped
3 celery stalks, chopped
1 small red onion
1/4 cup balsamic vinegar
1/3 cup olive oil
salt and pepper to taste

To prepare the cod: sprinkle with salt and pepper and dredge in flour. Heat a large saute pan on the stove and add enough vegetable oil to lightly coat the bottom of the pan.

Pan fry the prepared cod fillets until fully cooked through (about 2-3 minutes on each side). Remove from the pan and place on a plate lined with paper towels and set aside.

To make the tapenade: add all the ingredients to a large bowl and toss to combine.

To assemble the loaded flatbread: remove a softball size piece of dough and flatten it out on a floured work station to resemble a round pizza.

Place the prepared dough into a preheated 450 degree oven (preferably on a hot pizza stone) and let it bake for about 10 minutes or until it begins to brown slightly. Remove from the oven.

Take some of the cod and crumble it over the flatbread and spoon some of the prepared tapenade over the cod. Sprinkle with shredded mozzarella cheese and place it in the oven to melt the cheese. Serve and enjoy!
