Korean Kimchi Pancakes

Korean Kimchi Pancakes

I absolutely love Kimchi pancakes! They are pack full of different flavors and go perfect with any savory lunch or dinner! Try serving with Korean BBQ and enjoy!

Ingredients

1 egg
1 tbsp kimchi brine
1/4 cup soy sauce, divided
1 cup flour
1 1/2 cups chopped kimchi
4 green onions, chopped, divided
1/4 cup vegetable oil
3-4 tbsp rice vinegar

Instructions

In a mixing bowl, add the egg, kimchi brine and 2 tbsp soy sauce. Whisk everything together.

To the mixing bow, add the flour, chopped kimchi, 2 of the chopped green onions and vegetable oil. Whisk everything together until combined. If the batter is a little thick, add a coupled of tablespoons of water.

Spray a large skillet with vegetable spray (if needed) and cook about 1/2 cup batter for each pancake. Cook each side of the pancake until they are golden.

Mix the remaining 2 tbsp of soy sauce and 3-4 tbsp of rice vinegar together for dipping sauce for the pancakes. Sprinkle the remaining chopped green onions over the kimchi pancakes and Enjoy!
